Apatzin Lime Powder 1kg
Apatzin Lime Powder is a high-quality powdered calcium hydroxide (also known as slaked lime or cal in Spanish), commonly used in traditional Mexican cooking. Supplied in a 1kg pack, this fine white powder is essential for preparing authentic corn dough (masa) through the process of nixtamalisation – the traditional method of soaking and cooking maize with lime to make tortillas, tamales, and other staples.
Lime powder is not the same as lime fruit. In Mexican cuisine, it’s used to treat corn so that the outer skin loosens and the grain becomes easier to grind. This process not only improves texture and taste but also boosts the nutritional content of the corn by making niacin (vitamin B3) more available. It’s also sometimes used to help preserve certain fruits or in pickling recipes. Due to its alkaline nature, it should always be handled with care and never consumed directly.
To use for nixtamalisation, add around 1 tablespoon of lime powder per litre of water and soak dried corn overnight before rinsing and grinding. Always follow safe handling instructions and avoid contact with eyes or skin. Store in a cool, dry place in a sealed container.
